Bean and Corn Soup

My sister in law got this recipe out of a vegetarian cookbook and it's become one of our favorites. The flavor is surprisingly rich, for bean soup.

Bean and Corn Soup

Chop 1 small onion and saute in 1/3 c water until tender.
Add: 4 c refried beans (2 cans but I use homemade)
1 3/4 c vegetable broth (chicken broth works too)
Stir in: 1/2 c salsa
1/2 tsp cumin
2 c frozen corn kernels
dash of tobasco
fresh ground black pepper to taste

Heat to serving temperature and garnish with cilantro and shredded cheese. Serve with corn chips for dipping.
